In his book, Sébastien Bras reveals the history of Suquet, Aubrac and that of his family, which for 3 generations has marked French gastronomy.
His father, Michel Bras, inherited the family restaurant in the village of Laguiole in the Aveyron region. In 1992, he opened Le Suquet, which offers breathtaking views of the Aubrac plateau: a stunning landscape somewhere between forests resembling the Mongolian steppes and Scottish moors. Michel Bras quickly elevated the restaurant to a level of excellence, earning three Michelin stars. Revitalizing this isolated area, he created iconic dishes such as the Gargouillou of young vegetables and the famous Chocolate Fondant. In 2009, Sébastien Bras took over the reins of Le Suquet. Like his father before him, he champions a cuisine rooted in and shaped by the land, a cuisine of vegetables, where wild foraging, the family garden, and the work of local producers are inexhaustible sources of creativity. Through personal archives, photographs of the Aubrac in all seasons and forty emblematic recipes, Sébastien Bras tells the story of his region and the fascinating history of an extraordinary family, in which the taste for beauty and goodness has been passed down for three generations.
Trained by his father Michel and great chefs such as Pierre Gagnaire and Michel Guérard, Sébastien Bras took over the reins of the family restaurant Le Suquet in 2009. He offers a cuisine shaped by the terroir whether in Laguiole, in Paris, within La Halle aux grains, at the Bourse du Commerce – Collection Pinault.
